Why it tastes this way:
Colombian beans, especially from high-altitude farms, have dense structure and internal sugars that allow them to handle darker roasting without collapsing. When roasted to a deep (darker) level, the sugars caramelize, creating a deep, sweet base while still retaining some origin character which is the fruity/nutty profile you get from the same beans in a light roast.
